march 30th is officially mexico day

We are declaring March 30th Mexico Day. Today has definitely been Mexico day--and not even on purpose. Ok, not necessarily all Mexican stuff, but it's easier than saying Mexico-Latin-American-caucasian-fusion-twist-on-what's-actually-Mexican Day, right?

First a wonderful family in our ward announced it was their last day in our ward, because they had accepted a calling in the local Spanish Branch. We will miss them, but their three daughters already speak Spanish, and it will be a great opportunity for them.

We came home from church and were SO hungry. What was on the menu? Salsamole with cheese dip (Christian's concoction of salsa, avacados, cheese, and sour cream all mushed up and mixed together--looks nasty, tastes amazing) with tortilla chips. Richard had a quesadilla.

I then somehow ended up at Rengstorff park with Brooklyn and her kids (WAY more fun than doing homework). It was so nice to hang out outside! We pretended we were latinas (I'm sure no one noticed that we were the only white girls in the entire park), chatted with the adorable little girls at the playground, munched on elote (corn on the cob on a stick and smothered in mayonaise, a powdered cheese, and hot sauce--sounds gross, tasted wonderful!), and topped it all off with a dessert of fresh mango coated in chili powder. :)

For dinner, Christian and Richard (completely unaware that the other had done the same thing) decided to make nachos for dinner.

On his way back to his room, Richard said, "March 30th. March 30th should definitely be Mexico Day."

Amen, Richard. And so it is. From this day forth, March 30th is officially Mexico Day in our household.

Can someone remind me next year?

I think everyday should be Mexico day. But I'm just biased.

I have a hard time remembering birthdays or official holiday. I don't think I will be any use reminding you of Mexico Day next year.
